Tagliolini with spicy sauce with smoked bacon


For 4 people:
400 grams of fresh egg tagliolini (I used the Avesani egg tagliolini)
1 medium-sized onion
1 red chili (alternatively chili powder)
40 gr of extra virgin olive oil
160 grams of diced smoked bacon
60 ml of white wine
700 gr of tomato pulp (or tomato sauce)
Salt and Pepper to taste

To prepare the tagliolini with spicy bacon sauce, prepare the sauce first. I advise you to prepare it a few hours in advance, so that, during the wait the sauce takes on all the flavors.

Using a mixer, finely chop the onion and chili. In a pan, pour in the extra virgin olive oil, the chopped onion and chili, the smoked bacon and cook for about 5 minutes over medium heat, turning often to prevent the onion from burning.

After this time, add the white wine and blend for a few minutes, until it is almost completely evaporated.

At this point, add the tomato pulp (or tomato sauce), a little water, salt, pepper and cook over low heat for about 15 minutes. If you like a thicker sauce, you can extend the cooking time for a few more minutes, until it reaches the desired density. Season to taste with salt and pepper.

Cook the tagliolini (but also any other types of long pasta, like spaghetti or bucatini), drain and put them back in the pot where you cooked them. Add a few ladles of sauce in the pot and stir, serve and finish your plate with another ladle of sauce.

Serve hot! Well, your noodles with spicy sauce and smoked bacon are ready.. Enjoy!
